Pumpkin Chili Recipe

Makes 6 servings (12 snack-size servings) | Gluten-free & Dairy-free

Step 1

1 pound ground beef
1 pound ground turkey or ground chicken
1 Tbsp olive oil

Step 2

1 can (15 oz) pumpkin puree 
1 can (28 oz) crushed tomatoes
1 c. diced onion
1 c. diced pepper (green, yellow or red)
1-2 cloves garlic, minced
2 Tbsp pumpkin pie spice
1 Tbsp ground cumin
1 Tbsp chili powder (or chipotle chili if you want more spice)
1 tsp paprika
1 tsp salt
1 tsp pepper

Directions

  1. Brown meat in olive oil over medium heat until cooked through. Drain if desired.
  2. Add remaining ingredients to soup pot or transfer all ingredients to a crock pot. If cooking on the stove, bring to a boil and then reduce heat to low/simmer for 45-60 minutes. If cooking in the crock pot, cook on low heat for 4 hours.
